It all begins on 4th December, St. Barbe's Day, which is the start of the calendale, or Christmastime period.
The Wheat of St. Barbe in Provence
From the beginning of December small packets of wheat are sold in bakeries, shops and Christmas markets. Then on St.Barbe's Day, the 4th December, the wheat germ is planted on three saucers which are covered with damp cotton wool.
Other seeds that sprout quickly are sometimes used such as lentils, chickpeas or barley but wheat germ is common. The packet of wheat normally costs €1 and the proceeds go to le blé de l'esperance,the wheat of hope, a charity highly regarded in the Provence Alpes Côte d'Azur, PACA region.
